I wasn’t able to document each of my meals through photos because it’s been such a crazy week with a teething three month old, a crazy toddler and Halloween. I photographed as much as I could! Hopefully this gives you some ideas for weekday meals. What are your go to meals?
Monday October 28
Tonight’s meal is going to consist of Chicken Parmesan with a vegetable marinara served over rotini pasta. Recipe here. I puréed cooked vegetables (zucchini, peppers, onion and mushrooms) into a basil marinara sauce to add to the pasta so my picky toddler would eat it. It was a big hit!
Tuesday October 29
Tonight’s meal is barbecued pork chops with white rice and peas. We used boneless pork chops, seasoned them with seasoning salt and added a bit of chicken and rib flavored barbecue sauce. I unfortunately was so hungry that I forgot to take a photo before I inhaled it. It was very tasty!
Wednesday October 30
Day before Halloween! Tonight’s meal used the leftover pork chop from yesterday’s supper and we turned it into pork fried rice. I used scrambled eggs, carrots, peas, cooked white rice, the pork and some seasonings to complete this tasty and easy meal.
Thursday October 31
Halloween has arrived. Before we braved trick or treating we enjoyed a slice of take out pizza with my in laws. It was a simple, easy meal before we left in hurricane winds for trick or treating. Yum!
Friday November 1
The last meal we enjoyed during the week was lasagna. My version of the recipe is here. It was the perfect hearty meal to serve on this damp, rainy cold November day. We added some garlic bread to complete this carb filled fiesta. Delicious!
