It’s a rainy, damp Monday morning and I needed something to engage the two toddlers I have accompanying me today. What always cheers one up on a rainy day? Freshly baked goods. For some reason our bodies are programmed to immediately feel cheerier when the smell of sweet baking fills the house. Now it was a question of what to bake? I opened my Pinterest app for some quick inspiration, and in my suggested pins I discovered a Bakery Style Chocolate Chip Muffin recipe pinned by Little Sweet Baker (recipe here).

I am by no means a baker (if you’ve followed me for a while you know that I’ve only happened to ever perfect banana bread), so I needed something simple. The steps for this recipe were simply written, and made it so even the worst bakers (such as myself) would have a chance at perfecting it.
I began by mixing together the dry ingredients until they were completely incorporated. Then in a separate bowl, you mix the wet ingredients together. Then you fold the wet ingredients into the dry ingredients slowly until they’re just incorporated. Then it’s just a matter of scooping the batter into muffin liners and baking at the suggested temperature.
The end product turned out looking wonderful, and they were tasty to boot. I’m definitely adding this recipe to my personal cookbook so I can have it on hand for the future! The muffins were moist and fluffy, and didn’t leave me feeling too guilty for indulging. Thank you for the great recipe!
