A Week’s Worth of Delicious Dinners for Toddlers

Like any mother of a toddler, sometimes it’s a challenge to find things that both please them and nourish them. My daughter is one of those children that side eyes freshly prepared food on her plate yet has no problem eating dirt and twigs from the sandbox outside. Nourishment is important, and these are some of her favourites things to eat.

Roast Beef, Mashed Potatoes and Steamed Broccoli

The roast beef is so tender and falls apart once you slice it. It’s incredibly simple to prepare. Place a roast into a 6 quart crockpot along with an envelope of onion soup mix, a can of condensed cream of mushroom soup and 1/4 cup of water. Mix all together and cover the roast. Cook on low for 8-10 hours. Serve with potatoes and a veggie. My daughter is also a big fan of roasted potatoes and cooked carrots.

Sausage and Vegetable Pasta

Rotini pasta with mild Italian sausage, green peppers, onion, mushrooms, zucchini and asparagus tossed in a Tomato Basil marinara sauce topped with Parmesan cheese. Very simple yet extremely delicious.

Chicken and Vegetable One Tray Bake

This dish is so simple and you can change up the meats and vegetables to make it different each time! Usually I cut up chicken breast into one inch cubes and add zucchini, russet potatoes, broccoli, asparagus, red onion, mushrooms, peppers, beans and toss it with 2 tbsp of olive oil and some spices. A simple finger food dinner that my daughter enjoys.

Steak Fried Rice

What better way to use up leftover steak? My daughter is a HUGE fan of any rice dish, and this dish allows you to sneak in a lot of delicious fresh veggies while using up whatever leftover meat you have in the fridge. This meal consists of leftover steak, rice, green beans, asparagus, onion, peppers and garlic tossed in a sauce made from soy sauce, toasted sesame seeds, golden sugar and rice vinegar. Delicious and it only took 25 minutes to prepare.

Meatloaf, Boiled Potatoes and Veggies

Meatloaf screams comfort food. It’s very simple to make. We make ours with ground beef, eggs, onions, bread crumbs, a dash of milk and lots of ketchup. It’s hearty and comforting, especially when served with beans, carrots and potatoes. Yum!

Cheesy Jalapeño Chicken with Rice

This recipe is always a crowd pleaser in my household. The cheese sauce adds the comfort element and the jalapeño adds the sass. It is a mix of simple ingredients including chicken, zucchini, rice, onion, mushrooms, cheeses, spices and of course – jalapeño. This meal takes around half an hour to prepare and is absolutely delicious.

Lasagna, Salad and Garlic Bread

My daughter is a huge fan of pasta. This lasagna is packed full of nutritious vegetables including mushrooms, zucchini, peppers and onion, seasoned ground beef and an over abundance of cheese. Paired with the fresh salad and garlic bread, this meal is both healthy and comfort wrapped up into one.
